TEAM 2FERM

Description:

The TEAM®2FERM kit contains:

  • TEAM®ACTIV START fermentation nutrient and bioregulator
  • TEAM®ACTIV FINE fermentation nutrient and bioregulator
  • TEAM® FINESSE yeast strain blend

TEAM®2FERM nutrition

The specific TEAM®2FERM nutrition consists of 2 fermentation activators for frothing, perfect for the production of elegant and fine sparkling and semi-sparkling wines. The two products are TEAM®ACTIV START and TEAM®ACTIV FINE and are to be used in two separate stages of frothing and are available exclusively in the TEAM®2FERM kit. TEAM®2FERM nutrition is designed to allow the expression of the valuable and unique characteristics of TEAM® FINESSE yeast strains.

TEAM® FINESSE - Synergic strains of Saccharomyces cerevisiae and bayanus

A blend of yeast strains for the production of premium sparkling and semi-sparkling wines.

TEAM® FINESSE is specifically designed for the expression of fine floral and fruity aromatic complexities on sparkling and semi-sparkling, white and rosé wines. The synergy between different strains is intended to refine the olfactory stylistic aspect, resulting in a clean and heterogeneous appearance.

SMARTGUM

Description:

SMARTGUM® is obtained from high quality Acacia verek, a botanical species capable of producing an exudate that has levorotatory power. It doesn’t contain sulphur dioxide.

Enologica Vason’s R&D department devised an exclusive production process that respects the integrity of this protective colloid and maintains its filterability even on microporous
membranes: there is no hydrolysis process, but a specific solubilization method followed by a dedicated "SMART" filtration process.


The filterability is controlled, for each lot, by Enologica Vason’s QC Laboratory through verification of the Filterability Index and Vmax with the QFT System (*) by Ju.Cla.S.
SMARTGUM® is innovative also because it’s microbiologically stabilized and packed in a container perfectly sealed, able to avoid oxygen both during storage and use of
the product (Pouch-Up®).


SMARTGUM® behaves like a perfectly stable hydrophilic colloid, forming a quasi-protective layer around the hydrophobic colloids which, therefore, are not able to aggregate
and cloud the wine; this effective stabilizing effect is ensured by the presence of a protein fraction that is able to increase the colloidal complexity of the wine, greatly
improving the sensorial characteristics such as mouthfeel and softness on the palate.


SMARTGUM® actively supports the wine’s aromatic substances.

TUTTIFRUTTI RED

Description:

A powder form product obtained from an exclusive ellagic tannin stabilized with natural polysaccharides.

  • Able to manage the redox state so as to preserve the varietal and fermentative fruity notes of the wines over time.
  • Indicated during maturation as a stabilizer, but also in preparatory bottling operations on reds, rosés and, in lower dose rates, also on whites.
  • Gentle clarifying action.

PREMIUM LIMOUSIN SG

Description:

PREMIUM UVA SG

Description:

An elegant granulated product made with condensed tannin derived from grapes.

  • A direct reflection of the tannin composition naturally contained in grapes.
  • High reactivity to proteins and color matter, along with a clarifying action.

PREMIUM VINACCIOLO SG

Description:

Elegant, condensed tannin-based granular product, the result of a careful selection of the best extractable grape tannins.

The composition of Premium® Vinacciolo SG is characteristically catechinic, which comes from well-ripened berries. Hence it has a very pleasant and fresh organoleptic aspect, which once blended into the structure helps to maintain the wine’s redox stability over time. Its formulation gives it a high reactivity both towards proteins (including the polyphenol oxidases) and coloring substances, giving it limited but present clarifying activity. Due to its finesses and reactivity, it can be used from vinification until the phases preceding bottling.

Premium® Vinacciolo SG is the catechinic par excellence.

A special treatment called “instantising” makes Premium® Vinacciolo SG readily soluble in water while respecting its valuable organoleptic qualities and specific reactivity (SG Patent).

TUTTIFRUTTI WHITE SG

Description:

Granulated product obtained from an exclusive and balanced combination of gallic-condensed tannins, stabilized with natural polysaccharides, to preserving the varietal aromas.

  • Used in the treatment of white and rosé wines from the first stages of maturation, wines maintain their volume and will be more resistant to oxidation, maintaining fresh varietal fruity notes.
  • Clarifying action.

Description:

SAFE TAN SG

Description:

A specific granulated and highly soluble blend of gallotannins, extracted from selected plant materials.

  • A very useful tool when working with compromised grapes and more generally for redox protection.
  • Extremely reactive with proteins, it accordingly provides strong anti-oxidase protection.
  • Excellent direct oxygen receptor, suitable for reductive vinification of white wines.
  • Possesses clarifying action.
  • Increases the perception of body and structure, preserving the initial organoleptics

Essential in the case of unhealthy grapes, particularly in the presence of Botrytis cinerea due to also limiting the doses of SO2. At different doses, with these specific functions it is suitable both on white and red wines.

A special granulation treatment makes Safe Tan® SG readily soluble in water while respecting its valuable organoleptic qualities and specific reactivity (SG Patent).

COMBO APPROACH®

Safe Tan® SG displays a synergistic action with traditional reducing products (e.g.: Flavour Save) used in white wine vinification for creating redox protection.

SMARTAN UVA SG

Description:

Granulated product, obtained from tannins entirely extracted from grapes.

SMARTAN® UVA SG is a product based on grape’s cathechinic tannins with high performance in terms of supporting the tannic structure and with great efficacy in stabilizing the coloring fraction. For these characteristics, it is helpful in the first vinification phases, during fining and in micro-oxygenation. It has a certain reactivity towards proteins. 

SMARTAN® UVA SG undergoes a particular treatment called “instantaneization” which makes it readily soluble in water, while respecting his delicate organoleptic qualities.

Description:
