An exclusive strain for the production of Sauvignon Blanco V®arieties and grape varieties with aromatic thiols, bringing the typical components of this variety to their full expression.

SOLFATO DI AMMONIO

Description:

Pure AMMONIUM SULFATE, nutrient for yeasts.

In anhydride crystal form, straw yellow, transparent, with a pungent and bitter taste. Totally soluble in water.

AMMONIUM SULFATE is used as a fermentation activator as it contributes nitrogen in ammoniacal form to the yeasts; this is required for their multiplication. It is important to constitute a sufficient biomass to complete the alcoholic fermentation.

THIAMINE HYDROCHLORIDE

Description:

Bioregulator of alcoholic fermentation.

Pure thiamine hydrochloride (Vitamin B1), totally soluble in water.

THIAMINE, if dosed in the must from the beginning of fermentation, can be an excellent regulator of yeasts activity, controlling also the production of undesired secondary elements. Normally when using thiamine there’s a more regular fermentation process.

V ACTIV FERMISTAB is a specific mixture, ideal to prevent difficulties in the management of the alcoholic fermentation thanks to the removal, via adsorption of some important substances, acknowledged to be toxic for the yeast as copper and fatty acids. With this purpose, finds its application in some vinification protocols, interesting overall in the case the mean is particularly unfavorable for the yeasts as in fermentation stops.

Specific for the adsoprtion of unwanted elements in must.

V Activ Scorze is a preparation composed of yeast hulls obtained through an advanced purification process that can remove the cellular fractions that can give wine extraneous flavours. This action takes place thanks to its high adsoprtion power of toxic substances in the medium and particularly C8-C10 short-chain fatty acids, which inhibit cell-substrate exchange mechanisms.
