TEAM® FINESSE - Synergic strains of Saccharomyces cerevisiae and bayanus

A blend of yeast strains for the production of outstanding sparkling and semi-sparkling wines.

TEAM® FINESSE is specifically designed for the expression of fine floral and fruity aromatic complexities on sparkling and semi-sparkling, white and rosè wines.
The synergy between different strains is intended to refine the olfactory stylistic aspect, resulting in a clean and heterogeneous appearance.

Available in 500 g package or in the TEAM®2FERM kit.

The TEAM®2FERM kit contains:

  • TEAM®ACTIV START fermentation nutrient and bioregulator.
  • TEAM®ACTIV FINE fermentation nutrient and bioregulator
  • TEAM® FINESSE yeast strain blend

COMBO XT

Description:

COMBO® XT is a blend of different yeast strains specifically studied to increase the
thiols and other volatile compounds in wines. It is already known that the cooperative
“combination” of different strains in fermentation has a positive impact on aromas,
giving more complexity to the wine.
COMBO® XT is able to ferment in difficult conditions with good tolerance to high alcohol
content (up to 15,5% vol.) and at low temperature (13°C-30°C).
It is recommended an appropriate and balanced nutrition.

TEAM®2FERM nutrition

The specific TEAM®2FERM nutrition consists of 2 fermentation activators for frothing, perfect for the production of elegant and fine sparkling and semi-sparkling wines. The two products are TEAM®ACTIV START and TEAM®ACTIV FINE and are to be used in two separate stages of frothing and are available exclusively in the TEAM®2FERM kit. TEAM®2FERM nutrition is designed to allow the expression of the valuable and unique characteristics of TEAM® FINESSE yeast strains.

PREMIUM VITE SG

Description:

Granulated product obtained from the combination of tannins extracted from different noble fractions of Vitis vinifera: leaf, stem, seed and grape skin. For this unique quality PREMIUM® VITE SG is extraordinarily suited for winemaking.

PREMIUM® VITE SG confers to the product longer durability in time and resistance to oxidations. The treated wines remain aromatically more fresh and complex, supported in their constitutive structure. It encloses the condensed and ellagic nature of Vitis vinifera, therefore at sensory level acts delicately on the wine’s structure, allowing the wine to express itself in olfactory terms. It has a delicate clarifying action. 

A particular treatment called “instantaneization” makes PREMIUM® FUSION SG quickly soluble in water, respecting the precious organoleptic qualities and his specific reactivities (SG Patent).

SMARTGUM

Description:

SMARTGUM® is obtained from high quality Acacia verek, a botanical species capable of producing an exudate that has levorotatory power. It doesn’t contain sulphur dioxide.

Enologica Vason’s R&D department devised an exclusive production process that respects the integrity of this protective colloid and maintains its filterability even on microporous
membranes: there is no hydrolysis process, but a specific solubilization method followed by a dedicated "SMART" filtration process.


The filterability is controlled, for each lot, by Enologica Vason’s QC Laboratory through verification of the Filterability Index and Vmax with the QFT System (*) by Ju.Cla.S.
SMARTGUM® is innovative also because it’s microbiologically stabilized and packed in a container perfectly sealed, able to avoid oxygen both during storage and use of
the product (Pouch-Up®).


SMARTGUM® behaves like a perfectly stable hydrophilic colloid, forming a quasi-protective layer around the hydrophobic colloids which, therefore, are not able to aggregate
and cloud the wine; this effective stabilizing effect is ensured by the presence of a protein fraction that is able to increase the colloidal complexity of the wine, greatly
improving the sensorial characteristics such as mouthfeel and softness on the palate.


SMARTGUM® actively supports the wine’s aromatic substances.

MANNOZYM

Description:

Granular enzymatic compound, with beta-glucanasic activity to aid clarification and filtration in wines made with botrytised grapes.

  • Degrades glucans, facilitating clarification and filtration.
  • Considerable lysogenic action that increases levels of natural yeast cell components, particularly mannoproteins.

COMBO APPROACH®

Considerable results are achieved by adding, in the initial ageing stages, Mannozym® and L.P.A.® (Activated Yeast Paste), to obtain general stabilization and protection of the colloidal system.
