Description:

Potassium tartrate-based crystalliser for tartaric and calcium stability of wines

This crystalliser allows rapid crystal formation to be obtained at low temperatures in order to accelerate the tartaric stabilisation process.

At room temperature it also proves to be effective in calcium removal. For this treatment carefully following that specified in the technical datasheet is recommended.

EV GUM

Description:

ICON GUM

Description:

Intact long chain arabic gum, levorotatory and microfiltrable.

ICON® GUM is obtained from raw material coming from Acacia Verek, botanical specie able to produce an exudate with levorotatory power on the polarized light. The quality and the enological properties of this gum are definitely very interesting since the gum’s structure is a long chain. Enologica Vason’s R&D department devised an exclusive production process, such to respect the integrity of this colloidal protector, allowing it either way, to be filtered even on microporous cartridges: it is not hydrolyzed, but for its production was adopted a solubilization method followed by a dedicated “SMART” filtration system.

ICON® GUM’s filterability is consequently controlled on every lot by Enologica Vason’s QC lab through the verification of the filterability index and Vmax with Ju.Cla.S. QFT system.

ICON® GUM is very effective against color substances’ precipitation and, generically, for keeping the sensations of roundness and softness on the palate. To use in the phases preceding bottling and, generally speaking, packaging.

ICON STAB

Description:

The choice of these two fine macromolecules and their specific balance in solution, contribute to the original formulation of ICON® STAB – a specific product designed to contribute to the tartaric and colloidal stabilisation of wines and simultaneously contribute to the sensorial harmony on the palate.

The gum arabic in ICON® STAB is obtained from selected raw materials, originating from Acacia verek. Its preparation does not involve the use of chemical or enzymatic treatments in the purification phase. It is a complex polysaccharide, with high molecular weight and significant stabilising power against colloidal precipitations. The particular potassium polyaspartate selected for this unique product is one of the most effective stabilisers against potassium tartaric precipitations. Unlike metatartaric acid, it does not break down with temperature; therefore, in a stable colloidal system, it does not lose effectiveness over time.
In general, it is noted that sometimes, potassium polyaspartate can interact with colour if used in red wines. Therefore ICON® STAB has been designed to act as a protective colloid also on these possible induced colour instabilities, as well as, of course, for tartaric stability.

META V

Description:

Metatartaric acid with specific esterification index.

A highly effective stabiliser, META V® is produced from selected and checked raw materials in order to always guarantee a finished product of high quality and the possibility of also being used prior to the final microfiltration.

META V® ensures effective stabilisation against tartaric precipitations of potassium, and partially of calcium.

META V® is used in the treatment of wines characterised by limited storage periods, as an alternative to cold tartaric stabilisation or in general to subtractive techniques.

MPA

Description:

MPA is a mannoproteins based product with partial stabilising effect and which respects the original colloidal structure.

It aids greater gustatory harmony while contributing in any case to tartaric stability.

Optimal both in refinement and in the pre-bottling stages. In this case, checking the filterability index is always recommended.

SMARTSTAB

Description:

Potassium polyaspartate in solution with stabilizing action on the tartaric component of wines. Stabilizing agent with preventive action on tartaric precipitation, it can be used on all wines that are stable in terms of protein and colloidal state.

  • Present and active, including post inert microfiltration.
  • Does not alter protein stability.

Produced and marketed under licence on European patent no. EP 2694637, granted by Esseco s.r.l. with a contract dated 13 February 2017 and acknowledged by the Court of Milan with Law dated 15 September 2020: Order of 09/15/2020

 

We are pleased to announce that with the Order of 18 July 2023 that is attached hereto, the Court of Milan, while accepting an Appeal filed by us, established that the notices mentioned herein recently released by Esseco on the market regarding KPA-based products sold by us  "appear to integrate an illegitimate behavior because it is in contrast with the agreement of 13.2.2017 that provided for Esseco to put Vason in a position to in turn sell the polyaspartate-based oenological products  (...) and it’s also incorrect in terms of competition in the market for potassium polyaspartate-based oenological stabilizers; the above is all the more serious and deserving of the inhibitory action requested because they are intended to represent to the market or to individual customers that Vason's products do not meet the requirements imposed by the regulations of the wine sector".

Therefore, the Court of Milan prohibited Esseco and its agents from disseminating "false and tendentious and discrediting news and assessments and, in particular, news and assessments that:

i) lead to believe that potassium polyaspartate-based products for oenological use can be marketed exclusively by Esseco and by its distribution channels, without specifying with equal importance that Vason can also do so, as its licensee authorized to do so by the agreement settlement of 13 February 2017;

ii) lead to believe that wines enriched with potassium polyaspartate-based products for oenological use not coming from Esseco but from Vason cannot be marketed in the markets where the exclusivity period agreed inter partes is in force".

The Court of Milan also ordered the publication of this Order "as a landing page of the website  https://www.esseco.com/ in the ways that make it immediately visible for 60 consecutive days” and, therefore, you can find it published on the website also at the above-mentioned URL.

Obviously, it’s in place the case on the merits in the context of which the above-mentioned Order was issued, which is subject to appeal (the so-called "complaint").
